Acid value
The Acid value of a Lipide is the mass of potash (expressed out of Mg) necessary to neutralize the fatty-acids free contents in 1 G of fat contents.
This index, contrary to the Index of saponification, is given cold.
When it is given on a pure fatty-acid, it makes it possible to determine its molar Masse (thus its structure).
