Éclade

The éclade or églade is a typically Charente-native receipt, and more particularly of the island of Oléron. It is a receipt which is done the summer in outside and which replaces agreeably traditional the Barbecue.

This receipt consists in making cook the moulds while making burn spines of pine placed above. Postionnement of the moulds being important for cooking, it must be positioned vertically, the ones counter the others to form a circle.
